Chutoro, medium fatty tuna, is the sweet spot of the bluefin. Cut from the belly area between the lean akami and the richest otoro, it combines a rich, buttery flavour with a delicate texture and beautiful marbling. It's the Hook'd team's favourite cut, and one taste will show you why.
Each 120 to 150g block serves 1 to 2 people.
Defrost in its pack in the fridge for 6 to 8 hours, then pat dry with kitchen paper. Slice with your sharpest knife, using one long, smooth stroke per cut rather than sawing.
Chutoro is wonderful raw as sashimi or nigiri, or lightly seared. Let the slices sit at room temperature for 5 to 10 minutes before serving so the fat softens and the flavour opens up. It's also superb in salads, tacos and tiraditos, and even in a sandwich.
All our sushi-ready fish is ready to eat and prepared in our BRCGS-certified plant, by the same team and with the same care we use for leading restaurants and quick-service restaurant chains. Our site uses ozonated water, an environmentally friendly method of disinfection, and all fish is frozen before shipping for maximum safety.
All our seafood is frozen to lock in quality from sea to doorstep. Keep frozen until needed and defrost in the fridge before serving. Once defrosted, eat within 24 hours and don't refreeze. Free delivery Tuesday to Friday on orders over £75, or collect from us if you're near South Ruislip.
Where on the tuna does chutoro come from?
From the belly and the edges of the loin, between the lean akami and the very fatty otoro. That's what gives it its balance of richness and texture.
Should I cook chutoro?
It's best raw or very lightly seared. Cooking it through melts away the marbling that makes it special.
