Black cod is the fish behind one of the most famous restaurant dishes in the world: miso-marinated black cod, made iconic by chef Nobu Matsuhisa. Despite the name, it isn't cod at all. Its real name is sablefish, a deep-sea fish wild-caught in Canadian waters, prized for its silky white flakes and sweet, buttery flavour. Our portions are frozen at sea moments after being caught, locking in freshness and quality.
Each 170 to 200g portion serves 1 person.
For classic miso black cod, whisk together white (saikyo) miso, mirin, sake and a little sugar, coat the defrosted portion and marinate in the fridge for 24 to 48 hours. Wipe off the excess marinade, roast at 200°C for 10 to 12 minutes, then finish under a hot grill for a minute or two until the edges caramelise.
Black cod's high natural oil content makes it very forgiving, so it stays moist even if it's cooked a little longer. If miso isn't for you, it's just as good grilled with soy and ginger, or pan-fried and finished with brown butter.
All our seafood is frozen to lock in quality from sea to doorstep. Keep frozen until needed and defrost in the fridge before cooking. Free delivery Tuesday to Friday on orders over £75, or collect from us if you're near South Ruislip.
Is black cod related to cod?
No. Black cod is sablefish (Anoplopoma fimbria), from a completely different family. The name comes from its dark, slate-coloured skin.
What does frozen at sea mean?
The fish is processed and frozen on board the vessel within hours of being caught, before it's landed. This often gives better quality than 'fresh' fish that has spent several days in transit.
Allergen information: Contains fish.
