Hiramasa, also known as yellowtail kingfish (Seriola lalandi), is one of the most prized fish in Japanese cuisine. Its firm yet delicate flesh carries a rich natural oil content and a clean, faintly sweet flavour, which is why it's a favourite on sashimi and crudo menus in top restaurants. Our skinless portions are farmed in Denmark, certified sustainable and individually vacuum-packed.
Each 90 to 110g skinless portion serves 1 to 2 people.
Defrost in its pack in the fridge for 6 to 8 hours, then pat dry. For sashimi, slice across the grain into pieces around 5mm thick and serve with soy sauce, wasabi and a few drops of yuzu or lime. For crudo, lay thin slices on a chilled plate and dress with citrus, good olive oil, flaky sea salt and sliced chilli. To cook, sear in a very hot pan for about 1 minute per side, leaving the centre pink, or grill with a teriyaki glaze.
All our sushi-ready fish is ready to eat and prepared in our BRCGS-certified plant, by the same team and with the same care we use for leading restaurants and quick-service restaurant chains. Our site uses ozonated water, an environmentally friendly method of disinfection, and all fish is frozen before shipping for maximum safety.
All our seafood is frozen to lock in quality from sea to doorstep. Keep frozen until needed and defrost in the fridge before cooking. Free delivery Tuesday to Friday on orders over £75, or collect from us if you're near South Ruislip.
Is hiramasa the same as hamachi?
They're close relatives but different species. Hamachi is Japanese amberjack (Seriola quinqueradiata), which is richer and fattier. Hiramasa is leaner and firmer, with a cleaner flavour that many chefs prefer for sashimi.
Can I eat it raw?
Yes. It's prepared to our sushi standard and frozen before shipping, and it's one of the three fish in our Sushi Bar box.
