Akami Lean Bluefin Tuna Block(120/150g)

£12.95

Tax included. Shipping calculated at checkout.

Akami is the lean, deep red meat of the bluefin tuna, cut from the loin. It's the cut many sushi chefs judge a tuna by: clean, rich and savoury, with a silky texture and the pure flavour of the fish itself, without the richness of the fattier belly cuts. This beautifully trimmed block is ready to slice for sashimi, nigiri or tataki.

Each 120 to 150g block serves 1 to 2 people.

Why you'll love it

  • Bluefin tuna akami, the lean loin cut
  • Sushi-grade and ready to slice
  • Silky texture, clean, savoury flavour
  • Individually frozen
  • 120 to 150g, serves 1 to 2

How to serve

Defrost in its pack in the fridge for 6 to 8 hours, then pat dry with kitchen paper. Slice with your sharpest knife, using one long, smooth stroke per cut rather than sawing.

For sashimi or nigiri, slice across the grain about 5 to 8mm thick. Akami is also the classic choice for zuke, where slices are marinated for 10 to 15 minutes in soy, mirin and a splash of sake before serving. For tataki, sear the block for 20 seconds per side in a smoking-hot pan, then chill and slice.

FAQs

What's the difference between akami, chutoro and otoro?
They're the three classic grades of bluefin, defined by fat. Akami is the lean loin, chutoro is the medium-fatty belly section, and otoro is the richest, most marbled part of the lower belly.

How is bluefin different from yellowfin?
Bluefin is larger and richer, with deeper colour and more complex flavour. Even its lean akami has a silkier texture than yellowfin.
