A favourite in restaurant kitchens, these Thai baby squid are wild-caught in the Andaman Sea and arrive fully cleaned, with the tentacles tucked inside the body. That means almost no prep: defrost, slice or leave whole, and cook. Small squid are naturally more tender than large ones, with a sweet, delicate flavour.
Each 800g pack holds 20 to 40 baby squid, serving 4 to 5 people.
Defrost in the fridge, rinse and pat thoroughly dry. The golden rule with squid is to cook it either very fast or very slowly; anything in between makes it rubbery.
For crispy fried squid, slice into rings, toss in seasoned flour or cornflour and fry at 180°C for 1 to 2 minutes until golden. For the grill or BBQ, leave whole, brush with oil, garlic and chilli and cook over a fierce heat for 1 to 2 minutes per side. For a slow braise, simmer in a tomato and white wine sauce for 45 minutes or more until meltingly tender. Whole baby squid are also perfect for stuffing and baking.
All our seafood is frozen to lock in quality from sea to doorstep. Keep frozen until needed and defrost in the fridge before cooking. Free delivery Tuesday to Friday on orders over £75, or collect from us if you're near South Ruislip.
Why does squid go rubbery?
Squid proteins tighten after about 2 minutes of cooking, which makes the flesh chewy. If you keep cooking slowly, they relax again after around 45 minutes. Quick and hot, or low and slow, both work.
Are the tentacles included?
Yes, they're tucked inside the body tube. Pull them out before cooking and cook them alongside.
