Extracting the Meat from King Crab

Once the king crab is cooked, it will become a beautiful orange colour. After the crab cools down, the meat is ready to be extracted. Here is how we do it:

Step 1: With each leg split into two at the main joint, use a sharp pair of scissors and cut along the bottom of the shell, splitting the shell in two.

Step 2: Once the shell is split, remove the meat from the shell. If there is any cartilage present, this can easily be removed by pulling it out of the meat.

Step 3: Repeat this process for all of the legs to extract as much of the meat as possible. King crab meat gold dust so make sure you don’t leave any good meat in the shell!

Step 4: If you wish, you can also split the shell of the shoulder using a sharp pair of scissors and see if there is any meat in there, but the prime meat will be found in the legs. Worth a try, though!

Step 5: Your king crab meat is ready to serve either hot or cold. Check out our recipe page for ideas on how to serve it.
